Learn Arab Cooking: Mahshi Day
During this course, I’ll share with you some of my favorite recipes when I was a child. There’s an infinite variety of stuffing.
I learned how to make stuffed grape leaves, zucchini, eggplant, etc in my mother's kitchen many years ago, and I'm sharing all her expert tips and tricks with step-by-step to show you.
" Mahshi " translate literally means " stuffed ". A traditional Arabian method of preparing stuffed vegetables and different types of squash in many middle eastern countries.
Incorporates rice and minced meat into the vegetables which have been hallowed and served in a tomato based sauce make for a super yummy main course.
These stuffed vegetables include zucchini, eggplant, tomato, pepper and vine leaves. What many foreigners don’t know about making such dish is that it’s usually a communal activity.
Stuffed vegetables is a traditional Egyptian recipe (it is called Mahshi, in Arabic), but the ingredients are easy to find in Portugal or anywhere in the world. The difference may be in the size of the vegetables, which in this case the eggplant and courgette (or zucchini) used in this recipe are the smallest. But it can be made with normal-sized vegetables. Or any other type of vegetables, such as peppers, tomatoes, grapes leaves or even vine leaves.
